Ingredients

2 tablespoon vegetable oil
2 cups onion, diced
1 tbl salt
2 tbl oregano
1 tbl black pepper
1 tbl pepper flakes
2 tbl sugar
2 tbl dried basil
1 tbl dried thyme
2 bay leaves
1/4 cup red wine vinegar
2 cups green pepper, diced
1 Tbl garlic, minced
1 to 2 lb. cooked sausage (such as andouille or Conesuh), cut into 1/2 inch slices
6 (14 ounce) cans Kidney Beans, with liquid
2 (16 ounce) cans diced tomatoes with basil
1 1/2 teaspoons cumin

Directions

1. Heat oil in large soup pot over medium heat. Add onion, pepper and saute until soft. Add remaining ingredients, except rice, cover and simmer for 30 minutes. Add hot sauce, to taste. Serve on rice with cornbread.
